Barley tea (or mugicha) is by far the most popular non-caffeinated beverage in Japan, especially enjoyed chilled in the summer time and can be seen lining the numerous vending machines across the country. 

Barley tea is easily made by putting one tea bag in a pitcher of room-temperature water and left alone for an hour or two, and then placing in the fridge. You can also make hot mugicha by using hot water, which will brew more quickly and a more intense brew. 

This barley tea has been made by slowly and carefully roasting barley using heated air, and uses only Rokujo Barley (or 6-jo barley). Barley can be divided into two main types, Nijou (2 jou) and Rokujou (6 jou), named so due to the difference in rows of barley in the two plants. 2jou barley is used most often for making beer and Shochu, while 6jou barley is used for barley tea and barley rice. Most barley tea, however, is made from mixing Rokujou and Nijou, but this premium barley tea only uses the more luxurious Rokujou.
