Masakage Yuki 240mm gyuto stainless clad white steel is made in Takefu Japan by Hiroshi Kato, the Masakage Yuki series is a stainless clad #2 white steel with a round Japanese magnolia handle. Yuki is the Japanese word for snow which refers to the texture of the stainless after it has had the scale removed from the forge, this texture is sometimes also called nashiji, or pear. Hiroshi Kato began making knives in 1959 and is a third generation knife maker.
240mm gyuto is a popular size among professional chefs especially for those that need a knife to work with larger items/quantities at a nice quick pace. Due to the lightness of the knife despite it’s larger length it does not feel oversized, you quickly appreciate the extra blade. The Japanese version of the French chef knife, gyutos are most at home with vegetables but can be used for a wide range of jobs, thin and precise they cut smoothly and wedge less than thicker knives.
