K Sabatier 2 3/4″ New old stock hand forged Nogent Style French Paring Knife

New old stock K Sabatier hand forged Nogent style knives made in Theirs France in the 1960‘s. Thin and light with good edge life and excellent sharpenability. These have the original handles and are not glued together, these knives have been cleaned up and stamped but are otherwise as they were made in the 60’s.

Photo details the two different woods that these were handled in, ebony or European walnut. From top to bottom: 9” chef, 9” chef, 8” chef, 6” chef and 2 3/4” paring knife. Please note this is only for one 2 3/4″ knife.

Being handmade there are slight differences between knives, some are slightly lighter and some are a little heavier. It must be noted that they have slight imperfections that would be consistent with handmade knives of their day; slight wavyness in edge or slightly out of flush bolster-ferrule. We are happy to take requests for handle and weight but we have a limited stock. If you are familiar with Nogent knives you know how infrequently unused ones with original handles come available.

Often called a Nogent style knife, this was the classic professional French chef knife, light and thin with a hand forged carbon steel blade. The distinctive single piece wooden handle is fitted over a rat tail tang extending through to the end.

These knives was hand forged in the 1960′s in Thiers France at the Aine & Perrier Sabatier works. Aine & Perrier Sabatier (aka K Sabatier) has remained a family run business since its inception in the 1830′s. The registered K trademark was recorded in 1834 making them arguably the oldest of the many Sabatier companies.
