Set of three newly finished and handled pre-WW2 forged carbon steel Nogent style chef knives, 6″, 8″ and 10″. Made in Thiers France in the 1920’s or 30’s and recently discovered. These knives are a living piece of history, light, nimble with a great old handworked steel that takes a razor sharp edge and is easy to sharpen.
Rustic traditional style santoku forged with a soft iron jigane cladding and a hard carbon steel center higane. Blades are hand forged and have a dark kurochi finish from the tempering forge. This nakiri is especially thin and fine, great for controlled thin vegetable work.
Swedish stainless 240mm western gyuto by Ashi Hamono of Sakai City is noted for the thinness and precision of their hand made zenkou or single steel knives. The Ginga line, utilizes top quality Japanese white carbon steel and Swedish stainless steel, made with either Western or Japanese style handles. Easy to sharpen to a beautiful edge with precise and smooth cutting.
Hand made 210mm gyuto with SLD core and stainless steel suminagashi damascus cladding. Made in Niigata Japan Yoshikane is a family business, Mr Tsuneo Yoshida a third generation bladesmith forges traditional Japanese and western style knives with his two nephews Kazuimi and Masashi.
