Everyday Prep knives are ones capable of being the do-most-things tool in a kitchen. These shapes offer broad versatility for everyday prep while still providing enough strength and stability to stand in as a primary knife. This collection focuses on mid-sized, all-around profiles such as chef’s knives, gyutos, and santokus.
While gyutos and santokus excel in precision slicing and vegetable work thanks to their thinner, Japanese-style grinds, they are generally not suited for light butchery or tasks that require torque or lateral strength. For those jobs, Western-style chef’s knives—built with more robust geometry and tougher edges—are more appropriate.
Together, these general-purpose shapes form the foundation of many cooks’ toolkits, offering a balance of versatility, efficiency, and control for a wide range of kitchen tasks.
