Trade in petty in excellent condition with original packaging and saya. This stainless clad semi stainless was used responsibly in a professional kitchen and was taken care of. It retains virtually all of the factory blade height, which is the appeal of this taller than average petty anyway.
SLD semi-stainless steel core clad with polished subtle geometric hammer marked stainless steel. Heat treatment offers a nice combination of edge life, and easy sharpening and toughness. SLD cuts well as it dulls and maintains a toothy edge for a long time. While not 100% stainless, SLD rusts very slowly and can be maintained almost as easily as stainless without intersecting with reactive ingredients like carbon steel.

This is a stainless-clad carbon knife. The carbon steel edge will patina and may rust near the exposed edge if left wet. The clad stainless sides resist corrosion but can still stain with prolonged moisture exposure.
Hand wash and towel dry promptly. Avoid twisting, scraping, or use on dense or hard materials. Use on wooden cutting boards only. Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.
Sharpen by hand using whetstones starting around 1000 grit progressing to at least 4000 and up to 8000 depending on steel type and edge geometry. Finish with a borachrome strop for lower finishes and a chromium strop for higher finishes. Avoid pull-through sharpeners and non-water-cooled mechanized systems. Ceramic honing rods are preferred for as-needed edge maintenance. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
