Monosteel Kanto style gyuto chef knife made with finely finished proprietary stainless steel and imitation mahogony pakka composite wood handle. This steel has an excellent blend of edge holding, sharpen ability, edge formation, toughness and good stainless properties. The handle work is very nice, and great fit and finish; smooth finished heel and spine as well as convexity on the blade face for smooth cutting and good release.
These have a strong 90/10 right hand bias to the finish sharpening but is ambidextrous otherwise.
