Vintage K Sabatier Jeune chef knife made in the 1960’s in Thiers France.
Knife is in fantastic used condition, it had some very light surface rust which has been cleaned up but the K Sabatier Jeune logo with grapes and Cordon Bleu electro etch are mostly gone, the silver Jeune grapes logo is still bright and clear on the handle. Blade is very full with very little sharpening done. Rosewood handles show some light scuffs but are otherwise in excellent condition
The K Sabatier family business had been run by two brothers during the 1950’s, in 1960 it split up due to a falling out between them resulting in the offshoot Jeune brand started by the younger brother (Jeune means young) which ran through the 1960’s.
These were hand forged after being drop forged and ground on water stones in the old style giving them a great geometry; nimble where they need to be and tough in the heel. These are the quintessential post war French chef knife and K Sabatier Jeune are sought after for good reason.
8.5 oz, 14.75” overall, 9 7/8” from tip to heel, 1 7/8” wide at heel
