Victorinox 5" curved boning knife with stiff blade. Stainless steel with a wood handle.
Victorinox's boning and kitchen knives draw a cult-like following within butchers and cooks, possibly because their stainless is some of the easiest to sharpen that we've come across. For years they were sold under the now-discontinued brand, Forschner, in the U.S.
Famous for the iconic Swiss Army Knife, Victorinox started in 1884, and has since become a major worldwide brand also dealing in watches, luggage, etc. They were one of the first companies to fully embrace stainless steel as a cutlery material. The company name comes from the conjoined names of the founder’s mother, Victoria, and international name for stainless steel, Inox.
Due to dealership restrictions, Victorinox can only be sold in the United States.
