Stainless steel gyuto in good overall condition with original packaging but with some over-grinding in the middle section of the belly, leaving this portion of the blade thinner than normal. It did suffer some edge damage because of this thinness but most of the extreme thickness was removed during repair, however, the knife is still thinner than most and should be used as a precision cutter for fine work rather than a heavy handed volume knife.
Though this knife is imperfect, we were very impressed at the resilience of the very thin edge when it came back rolled instead of chipped. This is be a testament to the quality of heat treatment.

Hand forged in Sakai and ground by a young sharpener in Sakai. These knives come with an impressive lineage with the sharpener's grandfather being one of a few knife makers who pioneered the wide bevel grinding on double bevel knives.
