3 piece carving set made from approx 1880's to 1920's. Hand forged 8 3/4" carbon steel blade has been sharpened in some but is still full of life, stag grips with brass pin in center are nice and secure. The Copley's patented guard is secure and the spring is nice and stiff, tines have a slight kink on one side but are otherwise in good shape. Light flexible blade has a fresh edge.

Andrew Jackson Jordan was an American from St Louis who set up a knife manufacturing business in Sheffield (the East India works) and imported knives to the USA made at the East India Works and on contract for A J Jordan by other Sheffield manufacturers.

Like all other culinary knives this should never go in the dishwasher, carving knife handles will come loose with high heat (dishwasher, stove top etc), carbon steel can rust if left wet or dirty, expect a patina to form with use.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
