Mentsuyu is a fragrant and flavorful base made from dark soy sauce and dashi (bonito, mackerel, sardines and seaweed). It is most commonly used as a dipping broth for cold noodles (soba, udon, etc), and this particular mentsuyu can be used as is without dilution for this purpose. You can also dilute to make a broth for warm noodles for a delicious bowl. If you want to create a hot noodle broth, simply add 1 part this noodle base to 2.5 parts hot water. Another common way to use mentsuyu is as a dipping sauce for tempura.
However, the benefits of mentsuyu does not stop there!
Often used in Japanese households as a "hack" for easy cooking, you can use mentsuyu for making agedashi tofu, curry udon, oyakodon, and even pastas.
Containing bonito Ichiban-dashi (first brewing bonito dashi stock), the soup base was brewed with a secret method called "Hongaeshi", which entails melting sugar into soy sauce and mirin with heat and letting it sit at a low temperature. This results in a truly distinctive and rich flavor. Contains no food additives.
