They are thin and light being hand forged on an old style 'Martinet' mechanical hammer and then ground by hand on stone wheels, very similarly to how knives were made in the 19th and early 20th century, these techniques and equipment are now long gone. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThey are lighter and springier than their modern contemporaries with great cutting feel and are super easy to sharpen, don't over-polish them with fine Japanese stones, these do better with a coarser edge (equivalent to 1000 Japanese grit stone) and kept up with a fine honing steel. The advice to use a steel before you use your knife is the result of these kind of knives in a busy professional kitchen; steel them once you feel the edge starting to lean to one side.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e Being handmade there are slight differences between knives and they may have slight imperfections that would be consistent with handmade knives of their day such as a slight waviness in edge and small bends, there can also be imperfections in small gaps in handle etc. They are not 'perfect' by strict standards but are still great knives.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e It should be noted as well that the wood is a bit dry from all the years in storage and the oak tannin based dye on the beech wood handles can come off on hands for the first several uses. Also\u003cspan\u003e, these can have cosmetic scratches or small imperfections in handles which will not impede the performance of the knife. They were THE maker synonymous with gyuto for many years. When researching gyuto history for our book \u003cem\u003e\u003ca href=\"https:\/\/bernal-cutlery.shoplightspeed.com\/sharp-by-josh-donald-molly-decoudreaux-pre-order.html\" data-mce-fragment=\"1\" data-mce-href=\"https:\/\/bernal-cutlery.shoplightspeed.com\/sharp-by-josh-donald-molly-decoudreaux-pre-order.html\" target=\"_blank\"\u003eSharp\u003c\/a\u003e,\u003c\/em\u003e Ashi-san had some interesting bits of information on Masakane because he vistied their old factory in Gondazaka (after the Yokohama factory that older ones are marked with) when he was beginning his work in the 1960’s.\u003c\/p\u003e\n\u003cp\u003eMasakane knives share a lineage of the first Japanese blacksmiths who traveled to the west to learn Western knife making techniques that inspired gyuto making during the Meiji era.\u003c\/p\u003e\n\u003cp\u003eThese Masakane represent the tail end of the most important gyuto maker of the mid 20th century.\u003c\/p\u003e\n\u003cp\u003eThin SK mono-steel blades cut very nicely with their thin profile and are super easy to sharpen and get a nice edge that holds well. They are ideal for the professional or home cook who is looking for a great workhorse with easy sharpen-ability.\u003c\/p\u003e\n\u003cp\u003eSometimes, SK family steels are viewed as inferior to more refined Japanese carbon steels like shirogami or aogami. However, when making single steel knives, SK has its advantages. SK steel rusts slower than many other carbon steels and has a good toughness, which benefits a thin mono steel knife.\u003c\/p\u003e\n\u003cp\u003eThis is a non-stainless carbon steel, it should be mentioned that extra care is required, it should be washed and dried immediately after use. Knives like this reflect the old 19th century and earlier equipment; old mechanical hammers for forging and grinding on stone wheels that the sharpeners lay on a bench over the spinning stone which Thiers is famous for and has long been replaced by more modern equipment.   \u003c\/p\u003e\n\u003cp\u003eThese are great for all sorts of kitchen work with their fine ground blades, these have a lof of taper on tang and blade giving the blade a stiff feel but with some flex at the tip, they work great on boneless meat as well as vegetables\u003cspan data-mce-fragment=\"1\"\u003e. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan data-mce-fragment=\"1\"\u003eBlade is unmarked, handle is in the old style pre-miter cut (1950's- early 60's?) Made in Thiers France.\u003c\/span\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cspan data-mce-fragment=\"1\"\u003eFrench 'boucher' butcher knives are used similarly to a scimitar or bullnose butcher knives; large cuts, slicing chops and steaks.
