Vintage 9.5” carving knife made for Ekco’s Ancienne Maison series by Sabatier Trumpet in Thiers France in the 1950s or 60s.

These were drop forged to form the blade shape and bolster and then hand forged to draw out the tang and thin the blade, these were hand ground and given a fine finish and represent some of the finer work done in their day. The name Ekco is associated with cheaper kitchen equipment but these are definitly not that and fly under the radar sometimes. They were produced by Sabatier Trumpet in Thiers France as their trademark guarantees.

This one has a POM handle in excellent condition. Blade has been sharpened only several times, it’s original fine hand ground surface barely shows use aside from a few stray scratches. The edge has been touched up but it was a dull factory edge when we found it.

9.25” blade 14” overall

This is a stainless steel knife. It should be hand washed and towel dried. Dishwasher use will result in degraded edge and handle. Consistent long term exposure to moisture can lead to oxidation.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
