VG10 Japanese stainless steel clad with tsuchime suminagashi (hammer marked damascus) cladding and octagonal maple handle with red maple bolsters. VG10 is a well rounded Japanese stainless steel specifically made for cutlery, it has a good blend of edgelife, toughness and good stainless properties.
These have good finish details, they are ground flat and thin behind the edge for good food release and ease of thinning on follow up sharpenings, the spine and neck/heel have been smoothed for comfort as well.
Nigara Hamono in Hirosaki City in Aomori Prefecture is a 350 year old metalworking company with swordmaking roots. Blacksmith Go Yoshizawa has expanded Nigara's range to include kitchen knives.
