Mazaki 240mm Gyuto Shirogami 2 Migaki Finish Wenge
Hand forged and ground by Naoki Mazaki in Sanjo Niigata in iron clad shirogami 2 carbon steel and with a horn ferruled wenge handle.
Mazaki-san worked at Yoshikane Hamono for many years and now runs his own shop in Sanjo where he hand laminates and forges iron clad carbon steels and hand finishes his knives in house.
Mazaki-san has garnered a loyal following among those who appreciate full sized Sanjo style blades and appreciate a steel that has a fine edge formation and keen cutting feel. Mazaki-san's work is really excellent, we are really happy to include his work in our lineup.
These knives are not stainless and care must be taken to avoid active rust, a dark patina is to be expected with use. No soaking or dishwasher.
