The sides have a fine convex face, with many featuring an old-style long swedge along the spine. \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eThis knife had another whole life before being repurposed, so expect wear to the handle and 'imperfections' that might be associated with a used antique table knife. \u003c\/p\u003e\n\u003cp\u003eA quick word from Josh Donald about these:\u003c\/p\u003e\n\u003cp\u003eIt's not uncommon to find great old German butcher's knives sharpened down to a shadow of their original shape but with a totally intact handle. Back then, butchers loved this old hand-forged German carbon steel for its easy sharpening and great edge life; they paid a premium for high-quality German butcher knives and often got their money's worth by sharpening them way past their original geometry. While you can't make a cucumber out of a pickle, but you can make a great boning knife out of a sharpened-down scimitar or bullnose, and that is what we are doing here.
