Hitohira Hiragana WS 185mm Santoku Stainless

Monosteel wa-petty made with thin ground AUS8 stainless steel and pakka composite wood octagonal Japanese handle.

These cut smoothly with their thin convex blades which are unusual for a knife in this price range (most are flat sided) and the octagonal handle offers a nice secure grip. This is one of the few wa-handled knives with pakka instead of natural wood.

Spine and heel of knife could stand some further smoothing as they are a little rough but otherwise these are a great value for the price.
