Mono steel VG1 stainless with nicely fitted rosewood handle. All the merits of a classic stainless mono steel gyuto but with better edge formation and easier sharpening than many.
Hand ground after machine ground VG1 is fairly thin behind the edge, this steel can be somewhat prone to chipping. The extra width behind the edge prtoects from chipping while still being thin enough to cut smoothly. A great take on the classic stainless western handled gyuto.
