Hand made in Sakai, rustic kurouchi finished iron clad aogami 2 forged by dentoukougeishi master smith Kenji Togashi and expertly ground by his son. Iron clad aogami 2 offers nice toughness and aogami 2 carbon steel's good edge life and fine edge formation on a nice treatment of the steel like this. This knife is forged and ground thick, it will have extra toughness with this heavier geometry making it great for breaking soft boned fish or small butchery work (so long as you know what you’re doing and don’t actually try to cut bones). It’s not a true yo-deba being tempered harder than a typical mono steel yo-deba but is more in that territory.
