Jikko 240mm Kiritsuke Gyuto. Iron Clad Aogami 2 core blade with kasumi finish. Octagon ebony handle with water buffalo horn ferrule.

Forged and ground by craftsmen Nakagawa-san of Shiraki Hamono (smith) and Hirosugu Tosa (sharpener). top level craftsmen in Sakai, Osaka. This series has a nice weights and a thin grind behind the edge, sharpen easily, and cut beautifully. Superb finish work on these knives, they have a lustrous kasumi finish and polished spine and heel. This is top shelf work and we are very proud to stock these.

Jikko is a family business established in 1901 in Sakai City, Osaka and has cultivated extensive relationships with traditional craftsman in Sakai. From basic to top shelf, Jikko maintains a high standard of quality control. Wonderful in house sharpening is done on all of their single bevel knives, and special care is taken to provide a flat, fine-polished ura (side opposite omote bevel)
