Masafune Kanto 240mm sujihiki in Japanese SK5 carbon tool steel. Recently made in the old Kanto style with a hand ground carbon steel blade and rosewood handle.
These have a really classic old style feel, a direct descendant of the original western influenced Japanese double bevel knives.
Easy to sharpen and smooth cutting, being non-stainless care must be taken to avoid rust. Do not let it sit wet, and never go in a dishwasher.
