Matt is a rich variety of durum wheat grown in Puglia, Italy. When cooked it has the aroma of summertime hay and tastes of stone baked bread and butter.
Matt is a Single Modern Heritage grain durum wheat that Felicetti carefully sources and selects from farms. They have been working with farmers for generations. Felicetti contract grows Matt wheat, stores it at the mill in dedicated silos and calls for grinding into semolina flour within 24 hours of production. They then marry the flour with artisanal pasta making skills, alpine water, and clean mountain air

Used by Michelin Starred Restaurants throughout Italy and the world, Monograno Felicetti has a reputation as one of the premier pastas of Italy.

Founded in 1908 in the Italian Alps in an area called the Dolomites, Felicetti is now managed by the 4th generation of the family. The family values their history as artisanal pasta makers, while preserving the environment. Monograno Felicetti uses a single type of wheat and grinds it into flour with minimal processing, to preserve its distinctive natural qualities and produce a healthy, safe and delicious pasta. 

Mongrano Felicetti pasta’s main ingredients are the pure and uncontaminated water that streams from the spring directly into the pasta factory, and the pristine and unpolluted air of the Dolomites, two ingredients that you can smell from the steaming pot of boiling water when you cook this pasta.
