Choyo series knives are specially made, fine-finished, professional quality knives from Sakai Kikumori. They are hand-forged by top level smiths and hand-finished on wet grinders in Sakai. These have a somewhat lighter blade with a mirror polish on the face and a rounded, polished spine and heel. These knives have very nice, smooth sharpen-ability and good edge life, not to mention excellent cutting feel. The Choyo series is highly recommended for a professional or sushi chef looking for high-performance, and easy sharpening.

Sakai Kikumori was started in 1926 and draws on Sakai's 600 year history as the major center of traditional Japanese cutlery manufacturing.
