Three-piece rice cooking donabe includes inner lid, outer lid, and pot.
In addition to the qualities of a Daikoku rice donate described below, the White Fog edition has higher heat conductivity due to the inclusion of minerals in addition to clay, making it more responsive if the chef desires to adjust the heat. (Traditional donabes made only from clay will remain hot once it is hot, even if one turns down the flame).
The White Fog edition also has thinner walls than the standard Black Daikoku Banko Rice Donabe, with a craftsman shaving it by hand.
These rice cooking donabes are the most versatile donabe styles. Aside from cooking rice, they can be used to cook porridge, stews, soups, and other gohanmono (seasoned rice dishes). Three-piece rice cooking donabe includes inner lid, outer lid, and pot.
The unique clay formula of our rice donabes allows rice to cook in a shorter period of time of around 10 minutes without any heat adjustments (for a 1, 2 or 3 go size). Rice made in a Kagetsu donabe tastes much better than rice made in the most expensive electric rice cooker, with grain structure being kept intact, and a sweeter taste and better aroma.
We are proud to carry our rice donabes from Kagetsu, a family business making ceramics for over 150 years in Yokkaichi, Japan.
Kagetsu was the creator of the modern donabe clay formula, as household cooking in Japan was transitioning from traditional wood-fire to gas after World War 2 and donabes needed to adjust to its higher temperatures. The current CEO’s father and uncle identified petalite as a key ingredient that can increase the donabe’s heat tolerance, after finding clues in the heat-resistant tiles of NASA rockets.
Because our line of donabes use a higher percentage of petalite in its clay formula than other companies, it is resistant to cracking even so much that you can bring it from the fridge straight to direct flame.
