Nouvel Ideal Series knives are drop forged from a single piece of XC75 carbon steel and tempered to 54-56 HRC. They are hand ground extra thin behind the edge for awesome cutting feel, easy to sharpen and have good toughness, and a great all around workhorse.

  • This is a reactive carbon steel knife.
  • Hand wash and towel dry after use. Do not air dry or place in the dishwasher.
  • Expect oxidation (color change, staining, spotting) with use.
  • Prolonged exposure to moisture or food debris will cause rust; remove any rust with a light abrasive.
  • Use only on a quality wooden cutting board.
  • Do not use on hard surfaces like bamboo or plates.
  • Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.

True to 1920s Forging

Our Nouvel Ideal line is an homage to the original Sabatier Ideal model of the 1920s.  Forged full tang integral ferrule/bolster carbon steel construction with brass riveted palissander handles are true to the first Ideals forged in the 1920s in Thiers.  We have added or subtracted some design features on different knives, but the essentials are still intact after 100 years.

Blending of Past Innovations

The original Ideal pattern is a blend of two knife patterns. The original hand forged Cuisine Massive (aka Nogent) with triangular blade, short tang and second ferrule ring and the drop forged, full tang, short bolstered Canadian.  The Ideal line blends the two with its integral, round ferrule extension of bolster, now synonymous with French knives.

Medium - Western Carbon

We recommend hand sharpening on whetstones to a low-medium finish starting around 400 and progressing to around 1000 grit with a monodiachrome strop finish. Gentle use with steel honing rods work well for as-needed edge maintenance. Avoid pull-through sharpeners and non-water-cooled mechanized sharpening. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
