Trade in Konosuke Sanjo MB series 240mm gyuto. Knife and Saya are in good shape but the edge has been sharpened in close to the cladding, a thinning might be in the future. Hand forged stainless clad shirogami 2 with kurouchi finish. Handle and magnetic saya are burnt chestnut, a classic Sanjo wood. Handle is 1/2 octagonal 1/2 oval. A hard to find knife here…
