The nakiri is one of the oldest, most continuously used knives in Japan. It has a simple, double-bevel, rectangular blade and the name essentially translates to "vegetable knife". It is a fantastic knife for that use and not so great knife for anything else.
The nakiri has been a staple of the Japanese kitchen for hundreds of years and reflects the importance of vegetables in Japanese cooking.
