A truly exceptional miso and a must-have for any pantry. Named literally ”Ultimate Masterpiece," this miso is fermented for 2 years at a low temperature by miso maker Kyoichi Nakata, who invented the first non-additive miso in Japan.
As the taste of this miso is more intense and robust, start with a smaller amount for your dish than you would normally use for a more mass-produced miso paste.
