Barely used Kochi 240mm iron clad V2 gyuto made in Sanjo Niigata. Easy sharpening, smooth cutting. Didn’t get enough use from previous owner and he traded up. It’s in excellent condition with only a few sharpening. With original box and saya.

V2 steel is made by Takefu steel and is similar to shirogami 2 except for the addition of small amounts of chromium.
