Albert Pick & Co. established around 1895 grew to be one of the largest companies that supplied hotels, restaurants and railroads while also running a large chain of hotels from Chicago to the East Coast.

In 1932 they changed the name of the company to Albert Pick Co. (no "&") so this knife predates that and has all the hallmarks of pre1930s production with the T shaped cutlers rivets with one side a solid circle and the other a post and disc rivet. 

Not the highest end knife of its day, it was made in the factories of the Eastern US most likely from approximately 1910 to the 1920s with those rivets being used at the time. 

In the service style of the day in hotel restaurants or on train cars with meal service a knife like this would be used to slice at table-side hence the brass and ebony on a slightly basic stamped steel blade. The logo etched oversized on the blade ensures guests remember their host I think too.
