Like culinary specialties and local languages, the regional knife is a cultural marker of attachment to a territory, and the symbol of a French art of living, of our cultural exception. Ethnographer and specialist in the history of French cutlery, Christian Lemasson regularly contributes to an art cutlery magazine. He has also participated in documentaries on the Laguiole knife, which were broadcast by France 3, France 5 and Arte. Here he gives us the fruit of twenty years of wanderings and historical research across the country.
