Sabatier Professional 8" Ideal pattern stainless steel chef knife. Hand-ground after being drop-forged in the old Thiers style. Nimble where they need to be and tough in the heel. These are the quintessential post war French chef knife. 

This knife has been sharpened very little but the blade had a kink in it whcih has been corrected with a carbide tipped hammer. It is 95% straight now but has some small nicks from the straighening.
