Two-Way Service Donabe from Kagetsu Daikoku Banko Ware comes with ceramic bowl and lid. Both bowl and lid may be used directly over flame, allowing you to cook and serve directly from stove to table!  Simmer and sauté in the bowl and pan fry in the lid.

This Donabe impressively conducts and retains heat, but it can also preserve cool temperatures. It is ideal for serving an individual entrée or a shared appetizer and would be suitable for home cooks as well as industry use.  

The bowl and lid offer a wide array of uses and can be used together or separate.  They work together to preserve the heat, the hot juices, and the lurv from your cooking.  It is also the perfect bowl to reheat and serve previously prepared foods. Dazzle your friends, Aunties and Uncles by swiftly delivering a ready-hot meal in a presentation worthy of the Gods.

The lid portion can be used as a cover for the bowl, or a handle-less cooking pan. If using the donabe to blanch or boil, utilize the indented opening in the lid to strain unwanted/ excess liquids from your bowl. The smaller features on each lid are unique as they are all shaped by hand.

The bowl can be transferred from the refrigerator immediately to the stovetop without concern of cracking or damage to its ceramic integrity. With the right touch, it's also possible to cook rice using the donabe; poke a small hole in aluminum foil and cover the bowl before placing the lid on top. Timing and heat level must be taken into consideration. 

Please keep in mind that Two-Way Service Donabe get hella hot and retain their heat! You will need potholders or heat resistant gloves, as well as a trivet or two to use the bowl and lid painlessly. For pleasure, not punishment.

When cooking in Banko ware pots, a far infrared wavelength is created which creates more efficient cooking than direct surface conducted heating. Banko ware can be used on gas range tops, inside an oven and for brief re-heatings- microwave ovens. Banko ware is not suitable for electric range tops (electric oven is ok), no deep frying or use on induction burners.

Banko ware aka Banko Yaki (萬古焼)or Yokkaichi Banko Yaki is a heat resistant earthenware that has been made in Mie prefecture since the 18th century. It represents the majority of stoneware for cooking produced in Japan, and is officially recognized as a traditional Japanese craft. The addition of petalite added to the clay gives Banko ware an excellent heat resistance and allows it to be exposed to direct flame.
