A modern take on the traditional Japanese donabe, this ceramic cookware has been made with design and quality equally at front of mind.
This donabe has won numerous design awards around the world, including the coveted iF DESIGN AWARD.
Unique is its lid design that allows for a sturdy grasp, as well as the complete seal the lid makes with the pot allowing for moisture to be trapped inside. Moisture will be released from the food itself, allowing for "musui" (or "waterless") cooking--you need to add very little to no water when making dishes such as curry. Sounds unbelievable, but tested and true!
Can be used for stir frying as well as braising, and also in the oven.
These donabes were handmade in Gifu, Japan, where there is a 1300 year tradition of ceramic making called Mino-yaki. This area of Japan is known for having the highest quality clay to make donabes, the superior far-infared cooking that happens as a result allows food to be cooked to its core yet maintaining juiciness.
Donabe is ceramic, hence it has a porous surface that can absorb odors and oils. Before first use, recommended to do medome to prevent cracking. Medome is done by filling your pot about 3/4 full with water, and then boiling it with 2 tablespoons of potato starch (or rice flour, wheat flour, or corn starch). Alternatively you can use the water you used to rinse your rice. Let boil for 15-20 minutes, and then let it completely cool. Rinse.
