K Sabatier 6" Utility knife is great for small work or for those prefer smaller blades, with enough clearance to chop it can be a better choice than a narrow utility for work where getting the whole blade onto the cutting board is needed.

K Sabatier Authentique stainless series knives are forged from Z50C13 and tempered to 54-56 HRC; soft when compared to Japanese knives, but still with good edge life. These traditional style French stainless steel knives have a great toughness and are super easy to sharpen.

No dishwasher.

Please note, these can have cosmetic scratches or small imperfections in handles which will not impede the performance of the knife. This is par for the course on these knives and is part of how they sell them for a very reasonable price.

These knives are made in Thiers, France at the Aine & Perrier Sabatier works. Aine & Perrier Sabatier (aka K Sabatier) has remained a family run business since its inception in the 1830's. The registered K trademark was recorded in 1834, making them arguably the oldest of the many Sabatier companies.

This is a stainless steel knife. It should be hand washed and towel dried. Dishwasher use will result in degraded edge and handle. Consistent long term exposure to moisture can lead to oxidation.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
