Au Nain 17cm / 6.75" flexible fillet knife with nickel rat tail bolsters, rosewood handle with brass cutlers, rivets, in unused condition, made somewhere from the 1960s to 90s. This. knife was stamped and then hand ground, the sucessor of the older plate semelle knives.

This knife was made in the small town of San Remy across the Durolle river from Theirs, France. Au Nain is a 4th generation family cutlery business that was founded in 1885 by Gaston Saint-Joanis in Saint-Rémy-sur-Durolle, a district of Thiers. The name 'Au Nain' (meaning The Dwarf) was chosen as a playful response to their main competitor at that time - 'Géant du Couteau' (The Knife Giant). Much of Au Nain's manufacturing process is still in-house (from handling to polishing and sharpening, etc.) which is becoming less and less common. They continue to uphold traditional knife making processes characteristic to Thiers.

This New Old Stock knife does not come sharpened. Please request sharpening if desired in the order notes section of the cart page.

  • This is a stainless steel knife.
  • It should be hand washed and towel dried. Dishwashers will degrade the edge and handle over time. Extended moisture exposure can still cause oxidation.
  • Use on wooden cutting boards for best results.
  • Avoid hard surfaces like bamboo or plates. Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.

Medium - Western Stainless

We recommend hand sharpening on whetstones to a low-medium finish starting around 400 and progressing to 1000 grit with a monodiachrome strop finish. Gentle use with steel honing rods work well for as-needed edge maintenance. Avoid pull-through sharpeners and non-water-cooled mechanized sharpening. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
