Trade-in Bunka in excellent condition with original packaging. This honyaki forged blade came in with expected signs of use from a healthy patina and has never needed repair and was not sharpened prior to coming to us. This knife has been fully refinished to bring out the hamon. Comes with a fresh edge.

A bunka is a Japanese multipurpose kitchen knife known for its angular kiritsuke-style tip. Its flat edge profile excels at push-cutting and chopping, while the sharp, pointed tip provides precision for detail work and piercing tasks. Versatile and agile, the bunka covers everyday prep from vegetables to proteins with a bit more tip control than a standard santoku.

  • This is a honyaki forged carbon steel knife.
  • Honyaki knives are made from a single piece of high-carbon steel and require particularly attentive care.
  • Hand wash immediately after use and dry thoroughly with a towel. Do not air dry or place in the dishwasher. The fine steel and hardened edge are prone to rust and chipping if mishandled.
  • Use only on wooden cutting boards and avoid hard, dense ingredients that could cause micro-chipping. If you wouldn't bite into it, don't cut it with this knife.
  • Twisting, scraping, or lateral force will damage the edge.

W2 is a simple high‑carbon tool steel prized for hamon formation, fine edges, and easy sharpening. Commonly ~60–64 HRC, it takes a blazing sharp edge but is fully reactive and less stainless than 1095. Great for Japanese‑style knives and custom hamon work.
