We are proud to offer a rice set made for us in Niigata prefecture, including Koshihikari (considered to be the "royalty of rice") and Niji no Kirameki. 

The prefecture in Japan most widely associated with having excellent rice, Niigata has been the center of rice making in Japan for centuries due to its fertile soils, large temperature gaps in the day, and quality of its water that comes from melting mountain caps. As there is a long history of rice making in Niigata, there is also an abundance of knowledge and wisdom in its farmers. 

Koshihikari's main characteristics are its sweetness and mochirri (chewy/sticky) texture, where the more you chew it you notice a sweetness expanding in your mouth. The tsuya (glossiness), aroma, and umami are un-paralled when it is freshly made, hence you can enjoy a bowl even as is with no toppings. It is excellent when paired with Japanese food as it tends to be light. Just having with fresh oshinko (Japanese pickles) is a great way to truly appreciate its flavor. Excellent with sashimi and grilled fish as well. 

Almost completely unavailable outside of Niigata, Niji no Kirameki is widely considered to be equally delicious as Koshihikari (the "royalty" of rice in Japan) in flavor, aroma and shininess. Each grain is well-defined and large, allowing for high satisfaction. It also pairs easily with rich foods, including non-Japanese cuisine.
