Trade in nakiri in great condition without original packaging but with saya. This stainless clad carbon nakiri has some expected oxidation on the core steel and some light wipe markes in the cladding, but is otherwise free from significant scratches and blemishes. It has been sharpened in about 2mm but the work was done will and it's still thin but with a tougher than factory edge. Comes with a fresh edge.
Wakui-san began his journey into knifemaking working long hours as an apprentice at Yoshikane Cutlery in Sanjo, Japan. Wakui-san forges, heat treats and grinds all his knives in his small Sanjo workshop. We first carried his knives in 2015 and were immediately impressed. His hard work shows in the quality of his smithing and excellent grinding work.
Wakui knives are characterized by a solid middle-weight yet robust Sanjo feel -- very thin behind the edges, thicker at the spine, and amazingly easy to sharpen with clean grinds easy for follow up thinning.
