Vintage carbon steel Wusthof narrow semi flexible 10" slicer made at the end of their production of solid wood handled carbon steel knives. This one has the old carbon steel and solid wood handle but with the newer widening bolster design of the following 70s stainless knives. This is the very end of the long run of carbon steel Wusthof in regular production. 

Blade has been sharpened in a bit but not too heavily, handle is nice and secure and aluminum rivets are not corroded from mistreatment but there are a few dings on the wood. Blade has a bend at the bolster but the edge is essentially straight

Finding older carbon steel Wusthof knives is very rare, it wasn't until the mid to late 70s and 80s that they really began to export a lot of knives to the United States and those all stainless.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
