New old stock unmarked 35cm / 13.75" carbon steel chef knives from the vintage vault! These knives are unmarked so dating is a little difficult but the were most likely made in the the 1960s to 90's.

They were hand forged after being drop forged and hand ground on water stones in the old Thiers style. This lends to giving them a great geometry, making them nimble where they need to be and tough in the heel. These are the quintessential post-war French chef knife. 

B Stock are the second quality among the knives from this stock, we found  imperfections in the blade straightness which might impede sharpening or use for some users, they are greatly discounted but because of this, but also not eligible for returns. 

B Stock are offered in as found uncleaned condition. They are not sent sharpened.

This is a carbon steel knife. Carbon steel is expected to develop a dark patina with use. It needs to be hand washed and towel dried soon after use. Do not air dry. Do not put it in the dishwasher. Long exposure to moisture and debris will result in rust. Any rust development should be removed with a light abrasive.

Use on a quality wooden cutting board will help the knife stay sharper for longer. Use on hard surfaces like plates and bamboo will reduce the edge life and can result in edge damage.

We recommend hand sharpening on whetstones. We have found that most western knives perform best with a medium finish starting around 1000 grit. Avoid pull through sharpeners and non-water cooled mechanized sharpening. Steel honing rods work well with this knife.
