When you don't want a whole gobo (they are pretty long), simply have this around in your pantry to throw into your dishes. Gobo has an earthy taste, and adds a lot of flavor and texture to any dish.
You can rehydrate by soaking in water for 30 minutes, or boil in water for 5 minutes if you're in a rush. Even better, just throw into your pasta sauce, miso soup or stew that you are cooking.
