Assorted "Historically Inaccurate" re-ground 5.5" to 5.75" butcher's utility/field knife repurposed from a larger vintage knife.

*Listing is for one knife, these are shown as several examples of the first run, knife you receive will most likely be different*

Originally a carbon steel knife made in the United States from about the 1920s to the 1960s, we re-ground its carbon steel blade into a curved utility knife here at Bernal Cutlery. We also re-profiled it, and the sides have a fine convex face, with many featuring an old-style long swedge along the spine.

This knife had another whole life before being repurposed, so expect wear to the handle and 'imperfections' that might be associated with a used antique table knife.

A quick word from Josh Donald about these:

For most people in the U.S., chef knives have taken the pole position here as the main knife. In the past a bullnose knives 7" to 8" was the daily driver. There are tons of them out there, and especially when sharpened, they offer little utility to most cooks unless they are doing butchery. They're essentially shaped like a short scimitar that existed back in the day, but these are a bit of a reimagining. As such, they are historically inaccurate and fall into this category of re-imagined, reworked vintage knives done here at Bernal.

These are great for a wide variety of small kitchen jobs, especially those involving animal proteins, but they can also easily find their way into your hands for all sorts of tasks.

  • This is a reactive carbon steel knife.
  • Hand wash and towel dry after use. Do not air dry or place in the dishwasher.
  • Expect oxidation (color change, staining, spotting) with use.
  • Prolonged exposure to moisture or food debris will cause rust; remove any rust with a light abrasive.
  • Use only on a quality wooden cutting board.
  • Do not use on hard surfaces like bamboo or plates.
  • Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.

Medium - Western Carbon

We recommend hand sharpening on whetstones to a low-medium finish starting around 400 and progressing to around 1000 grit with a monodiachrome strop finish. Gentle use with steel honing rods work well for as-needed edge maintenance. Avoid pull-through sharpeners and non-water-cooled mechanized sharpening. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
