Sabatier 9.5" stainless slicer from approx the 1960s to 1970s. This was hand forged after being drop forged in the old Thiers style.
This knife was sharpened in quite a bit and we thinned it out to bring it thin behind the edge again. This one was thinned by a sharpener training on the large Japanese wheel we use in this process, it has a few cosmetic irregularities but is otherwise ready to get to work with a sharp edge. One handle scale has a small chip.
