Used chef knife made with David Boye cast 440C stainless steel with a dendritic crystalline structure, etched and signed by Francine Larstein, who worked with David Boye for many years, and handled by Todd Kopp in cocobolo, copper, brass, and coral/gold artstone.

The knife has been well cared for but has been sharpened a little; there are a few stray scuffs and scratches, but otherwise it is in great shape.

David Boye's cast stainless steel cuts very well over a long period when finished with a medium grit, it is not very hard and has good toughness. Francine's etching brings out the crystalline structure of the steel, which is responsible for its long-lived edge.

From Francine Larstein:

"The knife pictured in the top two images was made by Todd Kopp, unknown year.  Todd has been making our knives from Dendritic steel castings since about 200, soon after David Boye stopped making the custom line of knives.  The handle wood may be cocobolo, the ringset is copper, brass and coral/gold artstone.  The scribble on the back of the blade is my signature."

  • This is a stainless steel knife.
  • It should be hand washed and towel dried. Dishwashers will degrade the edge and handle over time. Extended moisture exposure can still cause oxidation.
  • Use on wooden cutting boards for best results.
  • Avoid hard surfaces like bamboo or plates. Don't twist or scrape the edge on the cutting surface to avoid early dulling and edge damage.

Medium - Western Stainless

We recommend hand sharpening on whetstones to a low-medium finish starting around 400 and progressing to 1000 grit with a monodiachrome strop finish. Gentle use with steel honing rods work well for as-needed edge maintenance. Avoid pull-through sharpeners and non-water-cooled mechanized sharpening. If you have to use a honing rod to be able to use the knife comfortably, it's time to sharpen the knife.
