A refurbished Sabatier St Honore chef knife with forged carbon steel blade, brazed nickel ferrule, and ebony handle (marked T F Gavitt). This was a sharpened in 10" when found which has been re-shaped and thinned into an 8.25" chef. It had lots of use and wear but still had a great knife left inside, here it is. 

The marks were mostly gone, but enough of the original is clear to identify it as a Sabatier St Honore 84, and given that a secondary deep "France" or "Made in France" stamp is missing, it can be infrerred that it is likely from before the 1891 tariff act, which demanded imports to the USA had a country of origin added. This maker exported to the USA in numbers and changed their stamps. 

A slightly taller and deeper-bellied than typical profile on this one, great for those that like some rock in their knife. Ground relatively thin but not super delicate, good for heavy work, maybe light bones.
