Super flexible 11" carbon steel slicer forged in Nogent, France. This style of handle is referred to as a "Nogent handle" to the chagrin of Thiers knife-makers who refer to it as "cuisine massif."

It is most likely a post-war knife, but could be late 30s potentially. The pressed tube nickel ferrule is older than a pressed tube aluminum ferrule but newer than a brazed sheet nickel ferrule.

Blade is full but has had some ill-conceived cleaning done with a Dremel; hopefully, a small non-crippling injury was incurred as direct karma, but who knows? There are still some light surface grinds, and the handle has a glued crack. Provided it's not soaked in water, it will be stable.

Price considered with these things in mind, not a super common knife to find, however.
