Pernot Nogent style 10" carbon steel chef knife made in Nogent France. Nogent became famous for this style of knife but it has much older origins. Nogent did first adopt the drop forged in France in the 1870s which sped its forging capacity past Thiers, Chatellerault and Paris. Thiers quickly upped their game and adopted the drop forge and has outlasted Nogent and Chatellerault but at the time this knife was made Nogent was still a player in French knife making and did a good job.

The blade is a little heavier than earlier ones that were hand forged after being drop forged, this was hand ground for certain and the nickel ferrule is a nod to the old handmade knives of Tichet and Charles from Paris that set the standard for professional chef knives in France.

THe blade is very full on this one but the handle had cracks that have been glued firm some time ago. Everything is solid and tight and provided it is not abused I expect no issues. There are some shallow pits from previous rust but is otherwise in good condition.
