Different than hardwood cutting boards, you do not need to re-oil and wax this board to protect it. Simply wet the board prior to each use and it will resist gouging, staining and absorbing odors. The natural oils in hinoki wood are known for their antimicrobial properties. 

The length grain board is glued from multiple pieces to prevent warping with additional warping resistance provided by inlays on both vertical edges. This board should be dried flat on a hard surface or by using the swing stand to dry upright to avoid warping. Allowing the board to completely dry between uses to avoid mildew.

Hinoki wood is a dense and fragrant Japanese soft wood in the cypress family with very strong anti-microbial properties. It is used in Japan traditionally as a surface for cutting and for hot tubs. Hinoki is very easy on knife edges, especially on hard high carbon Japanese steels that can be chipped easier on plastics and dulled faster on bamboo. 

We recommend using a Tawashi Brush with cold soapy water for cleaning hinoki cutting boards.
